Ingredients

nutmeg

baking soda

margarine melted
1/2
c.
evaporated milk
1
c.
unsulfured molasses
3/4
tsp.
vanilla extract
optional

tsp.
lemon extract
optional

flour
Instructions
Combine sugar, ginger, nutmeg, cinnamon, salt, and baking soda. Mix well.
Add melted margarine, evaporated milk and molasses. Add extracts if desired. Mix well.
Add flour one cup at a time. Dough should be stiff enough to not stick to fingers. Add an additional 1/2 c. of flour if needed.
Knead dough for smooth texture.
Roll out 1/4 inch thick and cut into cookies.
Bake on greased cookie sheets in preheated 375 degree oven 8 to 10 minutes. Cookies are done if they spring back when touched.
Recipe Notes
I find I use much more flour.
