Apricot Baked Brie Recipe

This one was meant to be part of my You Are The Sunshine of My Life party, but it was one of those times when you just have to prioritize, and uh… the cake won. But I made this later in the week for brunch and I’m so glad I did. (Notice, please, that my over-eager “helpers” picked one of the petals off and ate it before I could photograph it. Welcome to motherhood.)

If you are not fortunate enough to have a neighbor who makes unbelievably good apricot jam, you will have to use whatever you can get your hands on. Try a farmers’ market, if you can… I think the freshness of the jam contributed to how delicious this was.

Apricot Baked Brie

Cook Time 45 minutes

Ingredients

  • 1.5 lbs brie use the highest % fat you can find, cubed
  • 2 cans crescent roll dough I needed extra for the flowers
  • 1 1/4 cup apricot jam
  • 1/3 cup reduced sugar craisins unsweetened dried cranberries would probably be fine, too.
  • 1 egg beaten

Instructions

  1. Preheat oven to 350 degrees F.
  2. Spray an 11x7x1.5" casserole dish with non-stick spray.
  3. Unroll one can of the crescent roll dough, and line the inside of the dish, letting the extra overhang the edges.
  4. Add the brie, jam, and craisins.
  5. Top with remaining crescent dough, and embellish as desired.
  6. Brush the top with beaten egg.
  7. Bake, uncovered, 30-40 minutes or until the top is browned and the egg is set.
  8. Let stand 15-20 minutes before serving.

  1. I am having a party this weekend and I was wondering what I could make that would be different and delicious. This recipe sounds magnificent. I love brie and apricots so I am going to go ahead and serve it to my guests.

    1. Yes! I usually dig in with a fork almost right away, but if you wait until it’s just a little cooler, you can pick it up and eat it like a sandwich.

  2. I’ve never been an apricot fan, but I’ll try almost anything with Brie. This looks and sounds delicious, and I know my husband would love it. Thanks for the recipe share!!

    1. The apricot and cranberry flavors marry really well. Personally, I don’t care for mangoes, but I LOVE mango apricot salsa, so I can attest that blending flavors can change the way you think of one. ๐Ÿ™‚
